A proprietary blend of Indiana Straight Rye Whiskeys that have been aged for up to 6 years. These are then finished in ex-Caribbean rum casks using a solera method of only bottling a portion of the oldest barrels. Velvety figs, spiced pears and a hint of anise on the palate. Matured in a solera system where younger whiskies are slowly added into older barrels over time, the Doc Swinson rye is bottled at 47.5% after an additional maturation in rum casks. A blend of mash bills aged 4-6 years in new oak and bottled without chill filtration, this edition took Double Gold honors at the SF Spirits Competition. Never too sweet on the palate, the honeyed notes from the rum gently coat the spicy and herbaceous character of the rye, still shining through at 95 proof. Appearance: Tawny Nose: The nostrils are immediately hit with brown sugar, cinnamon, rich Demerara syrup and creme brûlée. Espresso bean and cocoa powder peek out toward the end of the nose. Palate: The mouthfeel is soft and delicate. I was expecting an overpowering heat from the rum finish but it was not there. Instead, the rum finish complements the rye profile and accentuates the rye spices. Aside from the spice, the whiskey has a sweet molasses taste and a jumble of stone fruit, raisin, and orange. The fruit is not too much, and it comes and goes quickly. Finally, the finish leaves sweet cream and tobacco on the palate.
