From the rugged highlands of Oaxaca comes an extraordinary expression of terroir-driven rum. Alambique Serrano Single Cask No. 18, “La Cima,” is a rare single-cask release crafted by renowned distiller Rommel Krassel, showcasing his distinctive approach to fermentation, distillation, and maturation.
Produced from 100% fresh sugarcane juice, the spirit begins its journey in traditional pine fermentation vats, where ambient native yeasts from the surrounding mountains drive a slow, wild fermentation. Distilled in 2021 on an alembic pot still, the rum captures the unique character of Oaxaca’s climate and microflora with remarkable depth and intensity.
Following distillation, the rum matured for 17 months in a fresh French oak cask, developing layers of spice, structure, and rich oak influence. It was then transferred to open-topped glass demijohns for a further 3 months of rest, allowing the spirit to harmonize while preserving its vibrant aromatic character. Bottled in December 2023 at a formidable 71.5% ABV, this cask-strength release remains entirely unfiltered and uncompromising.
On the nose, expect concentrated aromas of roasted sugarcane, dried tropical fruits, baking spices, toasted oak, and wild mountain herbs. The palate is powerful yet remarkably expressive, delivering waves of caramelized cane, dark honey, cocoa nibs, pepper, clove, and resinous oak before a long, warming finish marked by earthy spice and mineral complexity.
