Description
Binder’s Stash 7 Year Single Barrel Straight Bourbon Whiskey – Willett Distillery
An exceptionally limited single-barrel bourbon sourced from Willett Distillery, this Binder’s Stash release showcases Willett’s sought-after wheated bourbon mash bill in an especially concentrated and expressive form.
Aged 7 years and drawn from Canton Barrel No. 7084, this barrel experienced an unusually large angel’s share during maturation, ultimately yielding just 49 bottles. That remarkably low yield translates into a whiskey with tremendous concentration, depth, and character.
Bottled at 136.2 proof (68.1% ABV), it is undeniably powerful, but what makes this barrel special is its balance. The palate is enormous, with a huge mouthfeel and layers of rich, almost chewy texture, yet the proof never overwhelms the whiskey. The wheated mash bill brings softness and roundness to the underlying structure, creating an impressive balance between mature oak, concentrated sweetness, spice, and barrel character.
This is a bourbon that rewards patience. Pour it neat and give it a little time to breathe. As it opens in the glass, the intensity settles and the whiskey begins to reveal additional layers of aroma, texture, and complexity. A few drops of water can also unlock another dimension, but we recommend experiencing it neat first.
With only 49 bottles produced, this is a true rare release and a remarkable example of what can happen when an exceptional Willett barrel is allowed to develop on its own terms.
